Revelation Recipe

Last night I was having a rough night. With so many choices and decisions to make about our future, I was feeling overwhelmed and inadequate. I felt like I had a million choices to make but when it came to my daily duties I felt like I had nothing. My awesome job ended about 10 days ago, school just ended on Monday and now I'm not sure what to do next with each day. I finally pushed myself to get on my knees and pray (after the sweet encouragement of my loving husband :)) and then it came to me. I got up, went to my journal and wrote it all down. What was it?

It was a full list of things I could/needed to do in the morning, followed by a recipe for dinner. For those who know me even the least bit, I'm not very savvy in the kitchen and cooking does NOT come naturally for me. So this sweet blessing of knowing how I can spend my time more wisely, dedicate it to the Lord, and prepare a nice meal for my small family brought me great joy!

If you'd like to know what the recipe was, here goes:

Marinade:
3 large chicken breasts
Lemon juice (I used enough to cover each breast)
Salt&Pepper

1.)Marinade for about an hour, then throw all of the above into a crockpot. Pour a jar of your favorite salsa on top of the chicken. Cook on high 4-6 hours or on low 6-8. Before the last hour, shred the chicken and let soak in mixture for at least 60 min.

Ingredients needed:
2 Pitas slightly toasted
a bag of your favorite lettuce (we used a romaine mix)
1 avacado diced
1 tomato, diced
Avocado dressing (click link to get recipe. I added another half avocado than what the recipe calls for.)

2.) Slice about 1/3 of the edge of each pita to open it up to fill. Fill with salad, shredded chicken, diced avocado and tomato, and smother with dressing. Repeat with another layer or two until filled to capacity. Enjoy.
